So, I have been baking a TOOONNN lately, but I'm only going to share my two favorite recipes from this past week of baking with you guys! (Cause honestly, it would take me absolutely forever to blog all of them for you)
First up, we have Key Lime Turkish Delights. If any of you have tried looking for Turkish Delight Recipes, it's pretty rough. Almost every recipe uses a candy thermometer, which just makes everything complicated. Luckily, this is probably the easiest Turkish Delight recipe out there, and it turns out SOOO well!
I found this recipe online and adapted it to my fruity liking. (Since we had a few Key Limes rolling around) If you don't have Key Limes, any type of citrus will do just fine in their place.

INGREDIENTS YIELD 1 3/4 pounds UNITS~US
DIRECTIONS
Note: For a few of my little Turkish Delight squares, I crushed up some graham crackers and sprinkles the crumbs on top to make "Key Lime Pie Turkish Delights." Yum!
INGREDIENTS YIELD 1 3/4 pounds UNITS~US
- 3 envelopes unflavored gelatin
- 2 cups sugar
- 1⁄8 teaspoon salt
- 1 cup water
- 1 tablespoon Key Lime Juice
- 1 teaspoon Key Lime Zest
- food coloring
- powdered sugar
DIRECTIONS
- Mix gelatin, sugar and salt in a heavy pot.
- Add water.
- Bring to slow boil and simmer without stirring for 10 minutes.
- Remove from heat and stir in juice and rind.
- Add a few drops of food coloring.
- Taste for flavor; may add more juice.
- Pour into 8 inch square pan which has been rinsed in cold water but not dried.
- Chill overnight.
- Cut into squares and roll each in powdered sugar.

Just a little side note, these taste slightly like Jello, but more Exotic. Especially after you let them sit for a few days and the jelly starts to harden. Mmmmmm....
Smashed Berry and Brie Crostini
Now onto the Smashed Berry and Brie Crostini. This is so simple, easy, and delicious! I served it at a dinner party and it was a huuuuugggeee hit! Not to mention how ABSOLUTELY gorgeous they are! These are a great summer snack or appetizer, and just the prettiest little things!
Recipe from Nanette Wong:
1 French Baguette
6 to 8 ounces Brie (I found that about 7 ounces works pretty well)
2 cups berries (preferably fresh)
honey
spreadable butter
1. Preheat oven to 425 F
2. Cut the baguette into slices and lightly butter one side
3. Lightly toast in the oven for four minutes, but remove from the oven if they start to brown
4. Put a slice of Brie on top of each of the bread slices (you can put as much or as little cheese as you would like)
5. Place the Berries in a bowl and crush them gently using a spoon (not all the way crushed, but just slightly)
6. Place the toasted baguettes on a platter
7. Top with berries and drizzle with honey

As you can see in the picture above, I had all my brie cut and all of my berries smashed before the baguettes went into the oven, so when the baguettes came out, I'd be able to just pile everything on. You can either do it that way, or follow the order in the recipe, either way works just fine. And after I had finished making these, it also occurred to me that it would also be absolutely amaaazing with goat cheese, so you could try that too!
