A few Notes from Alyce:
1. With just the cup of peaches, I felt that it wasn't quite peachy enough. However, I'm not sure if adding more will make it too moist, so you can play around and experiment with it.
2. If you use a cookie scoop to scoop your cookies like I did, they might not need the whole 18 minutes bake time. I had mine in for about 16 minutes, so just watch them closely.
3. Just a quick random note, these cookies are INSANELY adorable and extremely photogenic, so go ahead and take a few pics!
4. When the cookies come out of the oven, the peach bits are like burning balls of fire, so be careful when you bite into a cookie! :)

Ingredients
- ½ cup granulated sugar
- ½ cup powdered sugar
- ½ cup unsalted butter, softened
- ½ cup canola or vegetable oil
- ½ tsp. vanilla
- 1 egg
- ½ tsp. salt
- ½ tsp. cream of tartar
- ½ tsp. baking soda
- 2 ¾ cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 1 cup peeled, finely diced peaches
Instructions
- Peel and dice peaches.
- Set aside.
- In a large mixing bowl, soften butter.
- Add oil, sugars, vanilla, egg, salt, cream of tartar and baking soda.
- Mix with an electric mixer to combine.
- Add flour and peaches.
- Stir with a wooden spoon to combine.
- Spray cookie sheets with cooking spray.
- Using a ¼ cup ice cream scoop, scoop dough and place on prepared cookie sheets.
- Bake at 350° for 18-20 minutes or until done.

Hi all! It's Alyce again!
I was bit today by the baking bug. Does anyone ever get that? You're just sitting around wondering what on earth to do, and then you're like: *GASP* "I should bake!" When I get bit by the baking bug, instead of making up a whole batch of cupcakes, I usually just whip up a quick batch of one bowl cookies!
So, I saw these on cantstayoutofthekitchen.com, and since my Dad is obsessed with peaches, we usually have at least a dozen lying around. So I whipped up these cute little cookies! True to baking bug cookie form, my cookie scoop, spatula and bowl were my only dishes!
But I would just like to point out that these are not very sweet cookies. (but my Mom and I are still absolutely obsessed with them!) So even if you have a huge sweet tooth (like me) you'll probably still like these, and there's peaches in them, which makes them healthy, right? Anyway, the base of the cookie tastes like a mixture between a sugar cookie and a shortbread cookie. And then with the juicy peaches: I just can't even explain. You'll have to try out these delicious summery cookies for yourselves!
