It's Alyce! I'm so sorry Lizzie and I haven't been posting a ton lately, but we just started school (boooooo) and so, obviously, have been a little more busy. But, we have been baking and DIY-ing, so we will have another few recipes up soon after this one, as well as (hopefully) another lip scrub recipe!
So anyway, back to this cookie dough. This stuff is totally amazing! I found the recipe on the PopSugar Food youtube channel (check it out. It's pretty awesome!) and knew that I NEEDED to try it! For a while, I was scanning the web for healthy cookie dough recipes, but after one failed attempt to make cookie dough a health food, I kinda ditched the healthy part, and just started looking for eggless cookie dough. {Random side note: Sorry this recipe doesn't have any pictures...most of them were gone before I worried about my camera!}
This smells like cookie dough, looks like cookie dough, and tastes like cookie dough. Honestly, this stuff is freakin' amazing! And it has a bunch of different uses! I scooped mine into mini cupcake liners and then stuck them in the freezer to make little cookie dough cups, but you can do whatever you want with it! Fill cupcakes with it, just eat it all straight from the bowl, whatever you want!
It has all the regular ingredients as cookie dough, except for eggs, which are replaced by applesauce. (And I promise, is doesn't make it taste gross) Anyway, this has been a super long intro, so let's just get into it:
Eggless Birthday Cake Cookie Dough
2 sticks butter, at room temperature
1 teaspoon salt
1 1/2 cups granulated sugar
1/4 cup applesauce
1/8 teaspoon nutmeg
2 cups all-purpose flour
2 teaspoons vanilla extract
1 cup mini white chocolate chips
1/2 cup rainbow sprinkles

- In a large mixing bowl, cream together butter, salt, and sugar until a frosting-like consistency is reached. Add applesauce and nutmeg, and mix until combined. Mix in flour and vanilla extract until just combined. Fold in chocolate chips and rainbow sprinkles.
Just a few quick tips and comments: I made birthday cake cookie dough (it's SOOOO Amazing!) But if you'd rather have chocolate chip cookie dough, do half brown sugar and half granulated sugar. The rainbow sprinkles and white chocolate chips are just for this variation of the recipe, so feel free to omit them and put in whatever you like.
